For as long as I can remember for Thanksgiving and Christmas my mom made her cornflake green bean casserole. It was one of her favorite side dishes to serve at our holiday get-togethers.
Since she passed I have carried on the tradition, it wouldn’t feel like the holidays without it.
This cornflake green bean casserole is far from the traditional green bean casserole. I actually never knew others existed since this was all she served over the years.
The cornflake green bean casserole is creamy and cheesy topped with a nice crunch for texture. It’s so good and a nice break from traditional at your holiday table.
Best part, you can throw this together in no time and it is even better the next day as leftovers. I always make extras since this is one of my sisters’ favorites and she can bring some home.
Cornflake green bean casserole recipe
- 4 – 5 T Butter
- 1/2 tsp pepper
- 2 T Flour
- 1/2 tsp salt
- 1/2 tsp onion powder
- 1 C sour cream
- 1/2 C cornflakes
- 2 16oz. cans green beans (French style works well too!)
- 1 C shredded cheddar cheese
- Melt 2 T butter over medium heat and combine flour. Whisk until smooth and remove from heat
- Stir in seasonings mix well
- Add the sour cream to combine
- Fold in green beans and incorporate well
- Place into a shallow glass pan ( I use a Pyrex pie dish)
- Top with the shredded cheese
- Crush your cornflakes and add those on top of the cheese layer
- Using the rest of the butter, add to the top in sections
- Bake at 350 degrees for 30 – 40 minutes. You want a nice golden brown top
