Tropical Pineapple Dip

This delicious and refreshing tropical pineapple dip is a great light dip for these hot summer days. The mix of fresh pineapple with coconut is delicious and summery while the creamy yogurt not only adds a punch of protein and calcium making it a healthier and creamy. Since this recipe only calls for a few ingredients it is simple to whip up a batch for a nice appetizer for a BBQ or just a sweet treat for the kids.

You can set your dip out in the pineapple “shell” and you will have an adorable conversation piece as well. Anything served in fruit always has a certain wow factor and makes it look so fancy. You can serve this with additional fresh fruit, pretzels, and graham crackers, they all pair beautifully.

Tropical Pineapple Dip Recipe

Ingredients:

  • 1 fresh whole pineapple
  • ½ cup shredded coconut
  • 1 cup plain Greek yogurt
  • 1/3  cup brown sugar

Directions:

  1. Cut off top 1/3 of pineapple.
  2. Using a long, sharp knife cut around inside of pineapple about 1/2” from the rind all the way around.
  3. Scrape out all pineapple around core down to 2” from the bottom and place in a large bowl,  shred with forks, drain out most of the juice. Set aside.
  4. With fleshy part of pineapple removed you can now take the knife and remove the core, throw it away.
  5. Add the yogurt, coconut, and brown sugar to pineapple and stir well to combine all.
  6. Place dip back in your hollowed out pineapple for serving.
  7. Replace pineapple top and store in fridge until ready to use.
  8. Best if served the same day.
  9. Serve and ENJOY!

  2. You are right, anything served out of a fruit bowl automatically has a wow factor to it.

    The dip would be good with fruit, graham crackers, pound cake… oh wait, am I supposed to keep it healthy? Well, I think it would be good with lots of things.

  8. I made this for my pool party over the Labor Day weekend, and have to say I was really disappointed. I’m not at all sure how this was supposed to be used as a dip, it was far too runny to be able to dip fruit in and actually GET any on the fruit. I thought it was too sweet, runny and a waste of a great pineapple! I did follow the recipe to the letter by the way, and am certainly not new to cooking, actually had my own bakery/catering company for several years.

  9. Love anything with pineapple and from the image it looks yummy. But it’s more like a sauce than a true dip. It slides right off any chip, cracker or piece of fruit. Served this at a party and the guests all said the same thing…it’s a sauce and way to sweet. I can only take their word for it as I’m severely allergic to yogurt. But at least 80% of it went in the trash.
